We have a St. Patty's party to go to tonight so I offered to bring a few things. I wanted to bring green food so I made green Rice Krispie treats with rainbow sprinkles and cucumber pitas. I won't bore you with the details on making the Krispie treats, because I think we all know how to do that. I did, however, add a few drops of green food coloring into the melted marshmallows to make them a little more festive and added rainbow sprinkles.
The cucumber pitas are one of my favorite appetizers. They are very easy to make and require only 5 ingredients. One package of pitas (white of whole wheat), one cucumber, a package of cream cheese ( I used light), an envelope of Italian dressing powdered mix and dry dill.
Soften the cream cheese and mix in the dressing powder.
Spread the cream cheese on each pita (there are usually 5 in a package). Now peel the cucumber and slice it into 1/4 inch disks.
Place the cucumber slices all over the cream cheese topped pita.
Next, sprinkle with the dried dill.
Lastly, cut the pitas into 6 wedges. Serve on a beautiful cut crystal serving tray (Kidding! It's plastic from the $ store!).

Oh my goodness, I think I would have eaten the whole tray- of both items! I love cream cheese and cucumbers, I will have to make these when garden goes crazy! Thank you!
